Two offshoots for sure: Monica Rambeau's place in the MCU; Scarlet Witch's place in the MCU. Another possibility: Ralph Bohner's possible place as a replacement for Quicksilver - did Agnes's spell wear off when the necklace was removed or when Agnes's powers were absorbed? Were her powers fully absorbed? Related: the people of Westview were pushed through the hex wall twice, once on Wanda's arrival and once at the end. We know that Monica's cells had changed after going through twice. Will any Westview residents gain some form of mutant powers? If so, will they be 'good guys', or 'bad guys' because of their resentment toward Wanda? Will Westview figure in again, or be left as a one-off vehicle for Wanda's story?

quite a few of those questions could be fodder for a second season, I think

But without Wanda and Vision. It'd need to be a spin-off series, maybe called 'Westview'. I'd watch.

And could feature Darci and Agent Woo (did he ever find his missing witness?)

No, the Missing Witness disappeared completely after Monica got sucked into the Hex. I think the missing witness was just a vehicle to get Woo to Westview. You'd think he'd be glued to the TV to see if his witness comes over or interacts in any way with W or V, but as far as I remember, it was Darci who was glued to the show.
